They hired one of my former renters under the table, promising him $60 a day. Then they cut it to $30 when things were slower than they anticipated. This didnt even last a solid week before they just gave up on him. They just stopped giving him hours but never formerly fired him leaving him. I dont have any problem with people working jobs like this informally, but employees ought to be notified that they are not going to be getting hours anymore, not just softly forgotten about when they could be out getting another job.
