I raise high quality Wagyu Beef. Ive used Carsons for over 10 years. They do a good job. First,they slaughter the animal with a single bullet to the head. Its immediately dead ... the animal is hanging out chewing grass one second and dead the next. They immediately cut it up and its hanging in their refrigerated trailer in 20 minutes. Theres No chasing or hauling the poor animal. This alone makes carson meats worth it. They also do a good job of aging , cut and wrapping the meat. I emphasis good, not perfect... but as good as anyone else Ive tried. Are they going to trim your steaks to the exact specifications? No but they are acceptable. In other words They blow through the cutting process like every other meat processor in Utah. .. Probably because they have to make a profit. Lets face it The tight arse people in Utah county dont want to pay what it would cost to trim meat so its 100 percent ready to use for say fajitas. I personally would pay a little more for this, but thats subjective anyway. They are good at removing bone etc... their hamburger is great. Lamb steaks or fajita meat etc... might need a little bit of trimming before you cook it. Thats expected. Basically trim your own pieces after you thaw them out and be glad theres a mobile butcher available. Cheers

Very quick turn around on my deer. However… I asked for the meat in chunks for jerky and sausage but that the back straps (tenderloins) be packaged separately and NOT in chunks. I got six 5 lb packages marked "deer chunks". When I called to let them know, they did nothing. No come in and get a couple pounds of beef tenderloin, no 20% off your next processing, not even a sincere apology. It was like "oh well… sorry". Some lady in the background was saying "nothing we can do. Just tell him sorry and get off the phone. What does he want us to do?" If I messed up someones order, especially the back strap of a deer (the best meat) Id do what it takes to keep them as a customer. Apparently they have all the work they need cause they didnt give a crap about me. So guess what? I aint their customer ever again and further more I am letting everyone that asks, how callus they were to me about THEIR MISTAKE! One star for getting my deer done fast, -1 star for the screw up, and -3 for their horse crap customer service.

I came in on a Friday late afternoon and the cut of fresh meat I originally wanted was gone, so I got a different cut. I get it, Fathers Day weekend no problem. They looked great and fresh. I put them in the fridge and when we went to cook them on Sunday afternoon (48 hours later) they looked a bit brown/grey, but I didnt think much of it. Well, we cooked them to a nice medium...they tasted weird, like I couldnt put my finger on why. But then I realized they tasted like old blood. There were parts that tasted fine and normal but 50% or more of it was just inedible due to the gross old blood flavor (it tasted how the butcher smells). There was no instruction to use them within a certain timeframe, no date on the packaging other than the pack date which was 4 days prior. Ive left steaks in my fridge for 48 hours before and never had an issue. So Im not sure what I did wrong....but I was definitely disappointed because I spent a decent amount for steaks that we couldnt even enjoy.

Warning: Dont take your wild game to Carsons. Absolutely the worst customer service I have ever experienced. I dropped off 4 quarters of an elk and requested that everything be cut into steaks (or chunks for jerky). The next day I was called and told it was done. What I got back was 75% grind (burger)--only 16 packages of steaks from an entire elk. Even worse, they claimed that the total weight of the 4 quarters I dropped off was only 130 pounds (for a bull elk?). When I called to discuss the problem, I was essentially told "too bad." They wouldnt accept any responsibility--their excuse was "thats our standard way of processing wild game." Even when I pointed out their failure to follow the specific instructions on the written order form, they denied any responsibility. So, after "losing" at least 25% of the meat and turning most of the remainder into burger, they still charged me their minimum 200 lbs rate for elk.

Asked simply for some beef to be sliced for fajitas. Told the lady (who is always there but do not know her relation to establishment) I would be in by 6 and she assured it would be ready. I show up and the meat is "ready" for me to be picked up, but not sliced. She said sometimes people order and dont pick up. The problem was that the butcher had already left and they werent able to slice it? It was important it was done for various reasons and she didnt even blink an eye, she could really have not cared less So much for assurances on it being ready! Just because of that I lost my faith in Carsons. Time to go somewhere else.

I have had both a deer and cow elk processed here. Both were delivered on time and the quality was excellent. They are always busy during hunt season, but despite acting with urgency, I have never gotten the impression they were unwilling to help or answer questions like some others have suggested. The packaging is always sealed and clearly labeled and they even helped take it out to the car when my wife picked up the order. Their pricing is very competitive based on the multiple processors I have called. I will continue to do business here.

This place has the best quality steak Ive ever eaten. We are foodies and have dined at some really great steakhouses. This rivals Ruths Chris Steaks, Im so happy to have such a quality place to buy meat so close. Also, check them out on Saturdays and they have BBQ out front. The guy running it seems so nice, has homemade BBQ sauces and freely gave little samples of it for me to try at home. Just good people.

Carsons does several lambs for me each year. Great service even when they are very busy. I give them a cut list and they follow it each time. There slaughter method for sheep is about as humane as it possibly can be. I recover the skins and the organ meat and they are happy to oblige. Their skinning method yields a very clean hide for tanning with no or minimal cuts. I recommend them to all my friends.

Carsons has the highest quality meat in Utah County. We love it so much, we havent bought meat at the grocery store for a year. They can have special orders ready within a day or so. Their bacon is the best weve ever had and the grass fed beef is totally worth the drive. Weve also bought loads of beef fat from them for making soap.

Great shop and great service!! We are even getting a grass fed beef from them soon in addition to the other great meats we have already got. The are a please to work with. But I cant take my kids because they beg me for the beef jerky they are selling now at the fresh meat counter!
