I have been to barbecue competitions and blaze offs in Kansas City and Texas and Memphis. I have been to every continental state but New Hampshire. I have tried burnt ends from Arthur Bryants and several other barbecue places including the one in Edwardsville Kansas that was featured on the Food Network. I can say with all certainty that the burnt ends as City Butcher are THE BEST I HAVE EVER TRIED. I am going to be 40 years old soon and have always been a carnivore. My husband agrees that the burnt ends and the beans were the best ever. Dont listen to the other review about the beans. They do not taste like a can. They arent all hopped up with brown sugar and barbecue sauce like some baked beans are, bit these are not baked beans. They are smoked beans. They are phenomenal. Large chunks of meat in them and a wonderful smokey flavor. If you want sweeter, add some sauce. Also, the cole slaw was unique but delicious. If you want creamy sugary slaw, go down to KFC. The slaw at City Butcher is an herbed vinegar sauce that pairs perfectly with the beans and the meat. I also liked the choices of sauces because I favor Carolina style sauce but my husband like spicy. The ribs were tender and not dry and they had no fatty pockets in them. The outside was lovely and smokey and not too salty. We are very pleased to have found out that the best barbecue spot we have ever found is within 3 miles of our house! Dont drive 3 hours to Kansas City. Just go right down Campbell next to the At Home store. Get there before noon and have your pick. KC and Memphis have nothing on Springfield! Great job guys.

So Im in town for 3 weeks for work. Being from Kansas City and a "till death lover of Joes of Kansas City (formerly Oklahoma Joes), I am a BBQ snob. I have attended some of the biggest competitions in the world with my BBQ team. So my goal is to sample Ribs, brisket, and tips. City Butcher is not an attempt. It is quality product. Not the same as the Oklahoma style. The rib rub is different. It is not thick and not competition "bark". but dont let that detract from the taste. it is unique to others i have had. The brisket was perfect. soft and done perfectly. Also, there is something to be said about a BBQ joint that often runs out of product and when its gone, ITS GONE. that means that they dont whip out old ribs from the walk-in and heat them up for you. Give them a try. I will be back!

Let me start off by saying I am a serious bbq guy. City butcher has the best brisket Ive ever had in my life, moist, succulent meat with a flavorful great looking bark, and a perfect smoke ring. This place is literally too good for Springfield haha, they should move down to Dallas wink, wink haha. I loved everything I tried there, I had the pork belly, texas sausage, burnt ends, brisket, potato salad and beans. The burnt ends were AMAZING and the potato salad was great as well, I was eating it trying to figure out how to steal the recipe! The beans are texas style and made with pinto beans and were great. This place actually gave me another reason to visit the in-laws, Springfield and City butcher I will be back! This is competition level barbecue right in your backyard!

My 7th time eating here this afternoon. Best BBQ bar none. The product is premium. the guys are masters at preparing it and their friendliness and customer service is outstanding. these guys take pride in their work and it shows. every time I eat here its the best time. I give it 10 out 5 stars. Yes, you pay for it. but your paying for quality. yes you will wait in line and maybe have to share a table with a stranger. but hey, dont be selfish! everyone needs to experience this stuff! its good for the soul! and when you sharing incredible Barbecue everybody is friends! its not just a meal, its an experience for your mouth. you will not find better in Springfield. Keep it up City Butcher, youll always be my first choice.

Finally got to try City Butcher out! My sammie had brisket, pork belly, pulled pork & a hot link on it. Tried the pork spare ribs, beans & choco- banana toffee pie too! Their bbq is true old school Texas style! No rub, just salt, pepper & smoke. Sauce on the side. I thought everything was very good & tender. I liked the beans a lot, but they arent baked beans. Just pintos with lots of meat & black pepper. The Pie was excellent! City Butcher and Barbecue - Springfield, MO, United States. City smokestack- brisket, pork belly, hot link & pulled pork. Great BBQ and quality meats at the counter. I heard great things and wasnt disappointed. I showed up a little early and on Saturday and it was worth it. I got brisket, pulled pork and pork belly. All of it was great. The brisket was amazing, but GET THE PORK BELLY. It was soooo good. I also got a ribeye for dinner that night. It was great, marbled premium beef cut directly from the slab when ordered. They dont have a huge selection at the butcher counter, but it all look great. Bonus points for the super friendly staff at the counter. I will be returning.

Being from KC and being not only a fan of bbq, but, should we say a bbq snob, I liked my experience here. I enjoyed the concept and execution of the joint. Staff was super friendly and full of personality. The menu was simple and to the point. I did like the meat, but I didnt love it. I thought the meat was slightly dry and our coleslaw was lacking flavor. That being said, I am a snob, a comp pit master and sausage maker and this is the best in Springfield that Ive had. Try this place. You will like it. Give it a try or come to KC

My goal, as a REALTOR, is to make my clients happy. City Butcher must have the same goal, because when you have their food in your mouth you cant help but smile. There are a few good barbecue places in Springfield but City Butcher has raised the bar! Best barbecue Ive had. Not just their meat but the beans are full of flavor. The only draw back is they are so popular, the line you wait in to order food is so long it is an exercise in patience. They need to figure that out so they can take better care of your customers.

I was in town from Seattle and asked at another (non BBQ) restaurant who had great BBQ, Everyone said "City Butcher". I mapped it and it was 20 minutes from me, but i went anyway. It was a late lunch, around 3 and when I arrived they were out of ribs. I had briquet and sausage (hot). It was awesome. The guys were super nice and helpful, and allowed everyone to take their time ordering. Loved it and will go back next time I am in town.

The turkey was great. The meat was soft and moist and really didnt need any sauce. So far, its probably the best BBQ Ive had in town. That said, I was not impressed with the beans. They tasted like they came right out of a can, but hey, it could have been a bad day for beans. I would certainly go back. The line was pretty long, and you can spend a lot of money really fast, but this place is really good..
