Most items are baked fresh but its hit and miss. New (to here) baker Mr. Andre who has been a baker for 40 years forgets to put salt in the french bread dough so the bread didnt brown in the oven. He smokes and doesnt wash up before going back to kneading the dough. Ovens are broken and have gas pilot problems making them very scary to operate to say the least. I made donuts at Freret Street Poboys and Donuts for Mr Troy for 2 years (he let me do custom flavors) and I made donuts at Tastees main W.Esplanade location for 3 years (thank you Mr. Robin for teaching me the ropes) for Ms L (she loves her some Tennis). I also worked at Sucre on Magazine Street for 3 months as a porter before Chef Tariq took me in for a year or two and had me make macaroons, pastries, and chocolates (Nicholas Cage left a funny voicemail that year about the kingcake). I have experience baking... Mandeville Bakery is a dump compared to any other place Ive worked at. The racks that the bread is made on were never cleaned in the almost 4 months I worked there. Yes they need to be non-stick but some loaves have seeds and its just getting gross on those racks. Cleaning was the hardest part of my job... Whoever was baker before me just let everything go to crap. I do feel a little bad for Mr. Tom the way I left, but I was there for 4 months doing fine, Ms Mary even said my buttermilk biscuits were the best shes had at the bakery and Tom hires on Andre who brags about making 3x more than me and working 3x less. He came in 2 hours late stayed for an hour or so (and made what I made all night) while ruining most of my production and constantly telling me "fasteau chateau". I was working so fast to get out, I had usually 35 hours in a 6 day work week to make full production for the bakery every night and all their custom orders. Not to mention 1000s of petitfours that are tedious. Just at a 6 hour work day to make about 200lbs of breads, also 3 pans cinnamon rolls, pecan boats, pies, king cakes, help out with brownies/cookies/muffins when stuffs proofing, the spinach loaves, all the spiced apples... Then weekends was biscuits on top of all that AND the sausage ones too. Generally not impressed at the quality of items from this bakery. Not at all impressed with the atmosphere of the workplace. Drunks used to come from the bar next door and let themselves in through the backdoor that stayed open (no fans in the bakery, and with the 400degree ovens going, on a mild night it felt like the surface of the sun). So yeah I had to call the cops a few times and eventually started carrying a baseball bat in with me it was that bad. The amount of food that was thrown away is unreal. I admit, the second day I did mess up a batch of kingcake dough, it got too warm in the mixer and proofed up before I could freeze it (all their kingcake dough is 2+ weeks old from frozen). But they do not donate any of the day old goods. I asked to bring them to the Samaritan Center but Mr Tom said he makes more money writing if off in the dumpster than he can with donating it... Bad bakery, bad owner, bad all around...

For most of my life, my favorite king cake came from Tastee Donuts, even though many disagreed with me. Once there was no more Tastee Donuts, I just shunned king cake, until this year, when I decided to try different king cakes from different LOCAL bakeries. Yesterday, I finally hit Krummels Mandeville bake shop. I have to say, that I find their king cakes to be better than Randazzos and Pauls Pastry, and "just as good as" Creole Bagelry. Im not saying that Randazzos and Pauls Pastry is bad, but if you swear by those places, I encourage you to give Krummels a try! In the meantime, I plan to hit Butter Krisp next. In any case, I found the people at Krummels to be very nice and friendly people! I wish they were open on mondays.

Mandeville bakery is truly the best bakery in this area. Everything is ALWAYS fresh and their prices seem a little too low, considering. They have wonderful made to order cakes. My favorite (for a large gathering, youll see why): Death by chocolate - seven layers of different chocolate confections including chocolate mouse, a brownie layer, and covered in a hard chocolate covering. Absolutely unnecessary, yum.
